Vegan/Gluten Free Banana Blueberry Breakfast Squares

For those of you out there who want something slightly sweet but still nutritious and filling in the morning these Banana Blueberry Breakfast Squares are just the thing for you! With the majority of their sweetness coming from natural fruit these breakfast squares do a great job of satisfying my sweet tooth without sending me into a refined sugar coma first thing in the morning. Since the base of the squares is made with GF Oats these bars also pack of good dose of fiber to keep you running strong hours after eating.

Ingredients: 3 Cup GF Rolled Oats (2 Cup blended, 1/3 Cup Brown Sugar, 3 Ripe Bananas (1 Chopped), 1/2 Cup Apple Sauce, 1/4 Cup Almond Milk, 2 Tb Coconut Oil, 1/2 Tsp Cinnamon, 1/4 Tsp Nutmeg, 1 Tsp Baking Powder, 1 Tb Agave Nectar, 1 Tsp Vanilla, 1/2 Tsp Kosher Salt, 1/2 Cup Blueberries, 1/2 Cup Walnuts, Optional: 1/4 C Sunflower Seeds, 1/4 C Flax Seeds

Directions: Preheat oven to 350F and lightly grease an 8” cake pan. Take 2 cups of GF oats and process them in a blender until flour like in consistency. In a large bowl, whisk together the dry ingredients (processed oats, regular oats, sugars, spices, baking powder, and salt). In another bowl, mix together the oil, applesauce, almond milk, and vanilla. Add in the two peeled bananas and smash into the wet ingredients until smooth. Add the wet mixture to the dry and stir combined. Now fold in the walnuts, blueberries, and the chopped banana. Spread into prepared pan (optional: sprinkle flax and sunflower seeds on top) and bake for 35 minutes at 350F. Once cooled cut into squares and serve with a drizzle of maple syrup on top.
