Today in my office we launched our second clean eating/living “Paleo” challenge where we vowed for 30 days to eat a clean diet based on vegetables, fruit, healthy fats, lean meat, and NO grains, dairy, added sugars, or artificial/processed foods. While living the Paleo Lifestyle grains are considered to be off limits. Instead, we are supposed to fill our meals with nutrient rich fruits, nuts, vegetables, and meat protein to curb the need to overdose of carbohydrates. When we eat this way our bodies begin to use the fat we have stored for fuel, rather than immediately using the carbohydrates we consume from grains. I have an unbelievable love for farmers markets, so much so that I honestly think if I could find a way to live in a Farmers Market I would.
