modern-paleo-diet

Today in my office we launched our second clean eating/living “Paleo” challenge where we vowed for 30 days to eat a clean diet based on vegetables, fruit, healthy fats, lean meat, and NO grains, dairy, added sugars, or artificial/processed foods. My family also decided that they would like to take part in the challenge and so we decided to do girls versus the boys. My mom and I are totally planning on kicking Mike and my Dad’s butts. For any of you out there would like to […] Continue reading →

paleo for vegetarians and vegans

If you have been reading “Eat Simple Love Yoga” for any length of time you have probably gathered that I tend to follow a primarily vegetarian/vegan diet. I do not eat meat of any kind (ex: chicken, turkey, red meat) and aside from the occasional egg whites I usually stay clear of any dairy products. However, this past summer I did begin to incorporate some fish back into my diet, since I have never claimed to be a perfect anything (please back down critics) when I […] Continue reading →

mix-and-match-salad

I am the queen of salads! You know how some men are the King of the Grill or Barbeque? Well I am the queen of the salad. They literally make up so many of my meals that if I didn’t love them, and know how to make them delicious and exciting, I would really have a food boredom problem on my hands. Instead over the years I have mastered the art of delicious and exciting salads. I honestly cannot remember the last time I had a boring lettuce, cucumber, and tomato salad that left me […] Continue reading →

Picture 258

This weekend was loaded with lots of fun things and the beautiful weather only added to it. I am loving these 80 degree days in May and have even started my annual summer bathing suit search via victorias secret. Everyone has their thing that they tend to have a little too much of…shoes, purses, jeans…mine just happens to be bathing suits. I love all the bright colors and I do justify my obsession with the fact that I live in a beach town and pretty much live in a bathing suit […] Continue reading →

I love Cinco de Mayo! I love Mexican food, Margaritas, and the exciting atmosphere that develops when the two are combined Mexican food is not exactly known for being super healthy but believe it or not it is possible! While I am keeping this recipe round-up to food only, have no fear I have an entirely Cinco de Mayo drink filled post coming your way shortly! Since I know not everyone who reads this is a vegetarian I have included a combination of meat, fish, and vegetarian options. Trying […] Continue reading →

lake champlain chocolate

After visiting Stowe, Vermont and realizing that our plans for a hike were going to have to be put on hold, we immediately filled the rest of our afternoon with an abundance of fun stops! First up was the Cold Hollow Cider Mill which my sister was raving about so we obviously had to pop in for a visit. The Cider Mill had a ton of cider related things to try like a huge vat of ice-cold cider to take unlimited samples of, apple-cider cracker spreads, cider cooked hot dogs, and finally cider […] Continue reading →

farmers market

One of my goals this spring/summer is to try to eat 95% of my diet straight from my garden or local farmers markets. I really don’t think that it will end up being all that difficult since we tend to have a good amount of options from our own garden and have a ton of local farmers markets open on all days of the week in the area. I am also planning a month-long challenge where I do not step foot in a grocery store! The idea of eating entirely local and all natural foods is really […] Continue reading →

irish green cake

Since Saint Patty’s Day is coming up this weekend and I will be spending it in probably the most Irish area of the United States with one of the most Irish people I know (my boyfriend Mike whose friends all call him “Irish” and who loves Guinness more than anyone I have ever met). I have been scouring the web and magazines for great Irish treats to make this Saint Patty’s Day filled to the brim with everything Irish. My book of Guinness Recipes that I picked up with […] Continue reading →

Gamberetti e Mozzarella Fresca Pizza, aka Shrimp and Fresh Mozzarella Pizza, is by far my favorite kind to make. Now this isn’t a vegetarian recipe but it can be gluten free if you go to whole foods and buy their frozen gluten free pizza dough (just make sure to thaw it out a few hours before you want to make your pizza). I am sure you can also find gluten free dough in other places, this is just the one I like the best. This pizza is rustic and unique. It is not your average pizza […] Continue reading →
