I am on another lettuce wrap kick which actually is working out perfectly while I am participating in my Spring Clean Eating Challenge. Every year come Spring my taste buds seem to change and I wind up craving a whole slew of different foods than I did in the dreary winter months. Today in my office we launched our second clean eating/living “Paleo” challenge where we vowed for 30 days to eat a clean diet based on vegetables, fruit, healthy fats, lean meat, and NO grains, dairy, added sugars, or artificial/processed foods. While living the Paleo Lifestyle grains are considered to be off limits. Instead, we are supposed to fill our meals with nutrient rich fruits, nuts, vegetables, and meat protein to curb the need to overdose of carbohydrates. When we eat this way our bodies begin to use the fat we have stored for fuel, rather than immediately using the carbohydrates we consume from grains. One of the biggest transitions for me when I first went gluten free was trying to break myself away from the staple American lunch item, “the sandwich”.
