After our delicious sugary-carb pancake dinner last night I knew that today I would be seriously craving some vegetables. Especially some high-fiber ones which would be sure to keep me full and help get my somewhat upset stomach back on track. I decided to go with a simple but delicious mixture of steamed vegetables and tofu for an added boast of protein. Happy Marathon Monday Everyone! Today is by far one of the most exciting days of the year up here in the Boston area. The Boston Marathon is the most competitive non-professional marathon there is and in its 116th year we are expecting a pretty intense marathon this year.
